Earlier this summer, I came across this idea for the perfect summer dessert: watermelon popsicles! I immediately got watermelon, kiwi and a popsicle mold and made the popsicles the same day. I’ve been hooked on them since. More importantly, my super picky 5 year old has been hooked on them!
If you’re looking for a delicious, refreshing and healthy summertime dessert or snack for your kids (or yourself!), you need to try these.
THEY’RE SO EASY TO MAKE
Just cut up the watermelon, place it in a blender (I’m a vitamix girl) and blend away. Fill your popsicle molds with kiwi slices, pour the watermelon puree into the molds and put them in the freezer for several hours or overnight. Run warm water over the mold for a minute or two before pulling out the popsicle. And that’s it!!
You can also make the popsicles with cantaloupe or honeydew puree, but the watermelon pops are the hands-down favorite with my kid and her friends. I do switch it up with slices of strawberry instead of kiwi, and sometimes we go all crazy and throw in both! The sweetness of the watermelon is subtle so pretty much any “accent” fruit would work.
THEY’RE GOOD FOR YOU, TOO!
These popsicles are not just easy to make, they’re also good for you. Definitely a much healthier alternative to store-bought, sugar-full popsicles.
Watermelons are about 92 percent water, so the popsicles are a great way to keep hydrated in the summer heat. But don’t let all that water fool you. This refreshing fruit is soaked with nutrients, containing significant levels of vitamins A (good for skin and hair), B6 (plays a role in maintaining normal nerve function) and C (awesome immune system booster, among other benefits), lots of lycopene (linked to heart health, bone health and cancer prevention), antioxidants and amino acids that improve circulation. And for those of us watching our weight, watermelons are fat-free, very low in sodium and low in calories. What more could you ask for in a summertime treat?
DON’T BREAK THE MOLD
If you think you’ll make popsicles on a regular basis, get a good quality popsicle mold. I started with a cheap one I grabbed from the grocery store. It lasted 2 weeks before it cracked. Then I found the Groovy Ice Pop Molds, which were great quality but made really big popsicles. So I switched to the Zoku Pop Molds (shown here), which make perfectly sized popsicles for little kids.
Once you try these popsicles, you’ll keep making them again and again so get a mold that will stand up to the daily use.
